I know what you're thinking....cucumber....dip? When my grandma first made this I was hesitant to even try it. For some reason this didn't really make sense that cucumbers would be in a dip, but I am REALLY glad I took the plunge to try it!
Cucumber dip is the absolute, most refreshing and flavorful dip you'll come across so please give it a try! And if you're looking for another way to use up those cucumbers you grow in the summertime, this is it!
Also - it should be shared, this became my go-to recipe to take to work pot lucks. I have a certain bunch of work friends who would become dissatisfied if I were to NOT bring it along lol. It's that good, I'm telling you! It's also my personal opinion that you can only serve it with a side of ritz crackers. The perfect combo! So here it is - the suspense is over! Recipe below!
Ingredients:
- 1 (8 oz.) package of cream cheese
- 2 cucumbers: peeled, seeded + chopped
- 1 cup mayonnaise
- 1 tbsp. fresh lemon juice
- 1/2 tsp. of dried dill weed (I always end up adding more or some fresh dill on top if I have it)
Directions:
Place cream cheese in a medium bowl. Beat until smooth. Stir in mayo, fresh lemon juice, dill weed and chopped cucumbers. Cover and refrigerate for at least 1 hour before serving. Serve with ritz crackers and enjoy!
